hoisin beef strips with
snowpea sprout salad
Serves 4
1/3 cup (80ml) hoisin sauce
1 tbs fish sauce
1 tbs rice vinegar
50g snowpea sprouts
1 long red chilli, seeds removed,
thinly sliced
1 firmly packed cup coriander sprigs
1 large green capsicum, thinly sliced
1 tbs sunflower or canola oil
600g beef stir-fry strips
4 spring onions, cut into 6cm lengths
Place hoisin, fish sauce, rice vinegar and
1 1/2 tablespoons boiling water in a small
bowl and mix to combine. Toss half the
mixture in a bowl with the sprouts, chilli,
coriander and capsicum.
Heat half the oil in a large wok over high
heat until smoking. Stir-fry half the beef
for 1 minute, then set aside and repeat
with remaining oil and beef. Return all
heefto wok with spring onion, stir-fry for a
further minute, then add remaining sauce
and toss to coat well. Serve with the salad .
