100g butter
2 tbsp extra virgin olive oil
400g couscous
Serves 4
Place the butter, oil, and 400 ml boiling water in a bowl. Cover with foil and stand for 2 minutes. When the butter is melted, add 400g couscous while stirring. When the liquid is absorbed, fluff with a fork.
Transfer the couscous to a basket steamer lined with a tea towel or muslin. Set over a saucepan of boiling water and steam for 20 minutes, or until tender.
